Dill(icious)! This is a great condiment for burgers, meatballs, endive, all veggies, and a wonderful sauce for baked fish. The dill just really makes it ZING!

Ingredients

  • 1 Fennel Bulb (grab a bulb that's bigger than your fist & smaller than a baby's head) stalks cut off + bulbs halved lengthwise + then cut lengthwise in 1inch thick wedges
  • 2 Cups Cauliflower stems removed and cut into small florets
  • 1/4 cup Fresh Dill
  • 3 whole Garlic Cloves
  • 1 Juiced Lemon
  • 1/4 Cup Tahini
  • 1/2 tsp Cayenne
  • 1 Tbsp. melted Coconut Oil

Instructions

  • Set oven to 425F
  • In a small bowl toss the cut fennel with the melted coconut oil and sprinkle with a little salt and pepper and then place on a baking pan.
  • While fennel is cooking prep your cauliflower and go ahead and give that and your garlic cloves a little drizzly poo of coconut oil in the same bowl you used for the fennel.
  • After 25 minutes give the fennel a flip and add the cauliflower and garlic to the baking pan.
  • Roast the veggies for and additional 20-25 minutes or until soft and nicely golden flipping them every 10 minutes.
  • Once these bad boys are nicely roasted give them another sprinkle of salt and pepper and set aside to let cool slightly.
  • If you are using a food processor just throw in all of the ingredients and give it a whirl until nice and smooth.
  • If using a hand blender place of the ingredients in a safe bowl and again... WHIRL.
  • If you are using your muscles, this may not be the best route and you should ask a neighbor or hit up Amazon Prime and live a little.
  • Adjust seasonings and life as needed.

Notes

This recipe is worth tons of experimenting! It has the consistency of a creamy hummus and the zesty dilly zing of it makes you want to put it on everything! Except people, that would be weird.... or kinky up to you.

Stir it up with a bit of feta cheese and get really nuts!

Fantastic for lunch boxes and meal prepping too.
