Ingredients

  • 8 large eggs
  • 2 Tbl full-fat coconut milk
  • 1 cup chopped fresh spinach
  • 1 Tbl finely chopped fresh parsley
  • 1 Tbl finely chopped fresh chives
  • 1 tsp finely chopped fresh thyme
  • 1 tsp fine sea salt
  • 1/4 tsp black pepper
  • 1 oz (about 4 slices) prosciutto torn

Instructions

  • preheat oven to 325F
  • Grease a large cast-iron skillet or pie dish
  • In a large bowl whisk together the eggs, coconut milk, spinach, herbs, salt and pepper.
  • Pour the mixture into skillet. Distribute the torn pieces of prosciutto throughout the egg mixture, pushing it down into the eggs
  • bake for 18-20 minutes until set in the middle and no longer jiggly
