Ingredients

  • 3 eggs
  • 1 banana
  • 1 scoop favorite protein powder
  • 1 tsp cinnamon (or pumpkin pie spice)
  • *1 tsp maca powder
  • *1 Tbl MCT oil
  • Coconut oil, full fat organic grass-fed butter, or ghee for cooking the pancakes

Instructions

  • Blend all of the ingredients, except the coconut oil/butter, in a blender or nutribullet. If you don't have one just grab a whisk and put a little elbow grease into it
  • Heat coconut oil or butter in a nonstick pan or skillet on med heat
  • Make the pancakes your favorite size
  • Cook for approx. 2-4 min or until bubbles show through
  • Flip!
  • Cook for 1-2 more minutes
  • they will be a little thin but are great for stacking
  • Top with blueberries, goji berries, almond butter, honey, maple syrup, all of the above
  • Skies the limit!

Notes

The pancakes will be thin so be sure to stack them! I like my pancakes the traditional size of about 5-6 inches in diameter. This recipe will make about 6 at this size.

*if you don't have MCT Oil or Maca Powder, make the recipe the same way, the pancakes will still be super yum
