Ingredients

  • 3 eggs whisked
  • 1 cup full fat coconut milk
  • 1/2 cup melted coconut oil
  • 3 cups tapioca flour
  • 1 Tbsp baking powder
  • 1 tsp fine sea salt
  • 1.5 tsp garlic powder
  • 1 tsp chili flakes (if you like it spicy, double it)

Instructions

  • Preheat oven 350F
  • Line a baking sheet with parchment paper
  • In a medium bowl whisk eggs, coconut milk, and coconut oil
  • In a large bowl mix the flours, baking powders, salt, garlic, and red chili flakes
  • Pour wet ingredients into the dry ingredients and mix until smooth and "dough like"
  • Let sit at room temp 30 min, stirring occasionally
  • Pour onto a lined baking sheet, spread as thinly and evenly as possible.The dough will raise a little when it cooks
  • *optional Sprinkle a little more garlic powder and chili flakes over the dough before popping it into the oven
  • Bake the pizza dough without toppings for 12-15 min or until dough feels soft and bread like, cool for 5 min
  • Turn oven up to 425F
  • add sauce and toppings, cook for 20min

Notes

I used a 11.5 x 17inch cookie sheet, anything smaller than this I would spread over two pans
