Ingredients

  • 1 cup baby carrots
  • 2 eggs
  • 1 tbsp. coconut oil
  • 1 tbsp. coconut flour (or protein powder)
  • 1 tbsp. Mexican vanilla*
  • 1 tsp cinnamon
  • 1/4 tsp baking powder
  • Crack or pinch of sea salt
  • 1/2 tbsp. butter for skillet or pan

Instructions

  • Heat your skillet and coat with butter or healthy fat of choice... except avocado, that would be a weird choice.
  • Blend all of the pancake ingredients in a nutribullet or a food processor.
  • Make pancakes a size your little heart desires (I find smaller ones are easier to manage).
  • Once you see the bubbles pop, flip!
  • Cook for another 1-2 minutes on the other side.
  • Top with all of the things + Eat!

Notes

My faaavorite way to eat these is to stack em' up!

*If you are using regular vanilla just use a tsp.
