Ingredients

  • For the Salmon:
  • 4 6 oz. Salmon Filets
  • 1 Tbsp. Organic Grass-Fed Butter Melted
  • 1 Tbsp. Almond Meal
  • 1 Tbsp. Poppy Seeds
  • 1 Lemon zested
  • 1/4 tsp Salt
  • For the Salsa:
  • 1 Avocado pitted and sliced into cubes
  • 2 Peaches peeled, pitted, and diced
  • 1 Habanero deseeded and diced (unless you like playing with fire)
  • 1/2 Lime juiced
  • 1 Cup chopped Cilantro
  • 1/2 Red Onion chopped

Instructions

  • Pre-heat oven to 450F.
  • Prep the salmon beauties by giving them a rinse and then pat dry with paper towels.
  • Place salmon on a non-stick baking sheet skin side down.
  • In a small bowl mix Almond Meal, Poppy Seeds, Lemon Zest, Salt & a few cracks of Pepper.
  • Pour melted butter evenly over all of the salmon... use it all, don't waste the butter!
  • Rub a heaped tsp of the Poppy Seed mixture over each Salmon Filet.
  • Pop these fishes into your oven.
  • Bake for 12-15 minutes.
  • While your fish are cooking, don't be lazy, make the salsa!
  • Mix all of the above ingredients except the avocado and peaches, fold those in at the end to not smoosh them.
  • Adjust seasoning and life as needed.
  • Once the fish is ready put on plate, put salsa on plate, sprinkle with a little salt and pepper and garnish with cilantro to be fancy.
  • Dive in!

This is a summertime hit and a dinner party pleaser (especially when you are so busy adulting .... or seamless doesn't deliver in your area).

This dish has a beautiful balance of healthy fats, proteins, and carbs, and don't forget all of the omega-3's and vitamin D you will nourish your body with from the salmon. Food hugs <3
