Ingredients

  • 1 Medium Avocado
  • 6 Tomatillos (approx. 1lb) husks removed and cut into 1/3 inch disks
  • 1 Jalapeno seeds removed if you don't like it hot
  • 1 Medium Shallot
  • 1 Garlic Clove
  • 1 Cup Chopped Cilantro
  • Juice from 1/2 of a Lime
  • 1/4 tsp Cumin
  • 1/4 tsp Paprika
  • 1/4 tsp Chili Powder
  • 1/4 tsp Salt
  • Cracked Black Pepper
  • 1/2 Tbsp Coconut Oil

Instructions

  • Melt the coconut oil in a sauté pan or skillet over medium heat, once the oil is hot toss all of the beautiful tomatillo disks into the pan
  • Sprinkle the tomatillos with salt and pepper and let them cook on one side for about 4-5 minutes. Flip, sprinkle with salt and pepper and cook for an additional 3-4 minutes or until soft and slightly golden. Remove pan from heat and let the tomatillos slightly cool
  • Using a food processor, blend all of the above ingredients together until creamy
  • If you don't have a food processor or blender, chop up ingredients and put some elbow grease into it! The flavors are so scrumptious, just eat it any way you can!!!
  • Adjust seasonings as needed
