Baked Coconut Mocha + Goji Berry Protein Balls

  • 1/2 Cup Coconut Flour
  • 2 Scoops vanilla Protein Powder
  • 2 tsp Baking Powder
  • 1/4 tsp Sea Salt
  • 1/2 tsp Cinnamon
  • 1 tsp Dark Cocoa Powder
  • 2 Eggs Whisked
  • 1Tbsp Vanilla
  • 3/4 Cup Almond butter (or cashew)
  • 1/4 Cup Cold Coffee
  • 1/4 Cup Goji Berries
  • 1 Tbsp Unsweetened Shredded Coconut
  • *optional throw in some dark chocolate cocoa nibs


  • Set oven to 350F
  • Brew your favorite coffee, pour yourself a cup and put 1/4 cup in the fridge to cool
  • Line a baking sheet with parchment paper
  • In a medium bowl mix coconut flour, protein powder, baking powder, sea salt, cinnamon, and cocoa powder
  • In a separate bowl mix eggs, coffee, vanilla, and almond butter
  • Add the wet ingredients to the dry, and mix until full combined
  • Fold in the goji berries *if you are adding cocoa nibs fold those bad boys in too
  • Put your shredded coconut into a seperate bowl or on a plate
  • These balls can get a little sticky so rolling them into the coconut flakes makes the rolling much easier
  • Roll your protein dough into about 20 small balls
  • Bake for 5-7 minutes


If you like to work out super early in the morning these are great for pre and post workout. Store in the fridge for a week
