Cilantro, Jalepeno and Lime Sweet Potato Biscuits

  • 2 sweet potatoes (enough to make 1 cup unpeeled & mashed)
  • 1 jalapeño chopped (discard seeds to make less spicy)
  • 1/3 cup chopped cilantro
  • 2 eggs whisked
  • 2 Tbsp coconut flour
  • 1 tsp baking powder
  • 1/4 cup coconut oil melted
  • zest of 1 lime
  • 1Tbsp melted butter


  • Preheat oven to 450F
  • Line a baking sheet with parchment paper
  • Cook the sweet potatoes for 45-60min or until soft
  • Once the sweet potatoes are cooled enough to handle, peel and mash with a fork or potato masher
  • Turn oven down to 375F
  • Mix the sweet potato mash, eggs, and melted coconut oil in medium bowl
  • In a separate bowl mix the coconut flour, baking powder, lime zest, jalapeño, and the cilantro
  • Mix the wet and dry ingredients together until fully combined and a nice sweet potato dough is formed
  • Form the sweet potato dough into approx. 8 biscuits. Shape and size are really up to you, the picture above is from a batch of mini biscuits I made
  • Bake for 20min
  • While the biscuits are baking melt butter with a little bit of lime zest (add jalapeño if you're feeling fancy)
  • After the 20mins are up pull the sweet potato's out of the oven and brush the tops with your fancy melted butter
  • Bake for 10-15 more minutes


I have made mini biscuits with this same recipe and was able to get about 12 from it
