  • 3 eggs
  • 1/4 Cup Almond Meal
  • 2 Tbsp. Protein Powder (or coconut flour)
  • 1/2 Cup Baby Carrots
  • 1 Tbsp. Organic Cacao
  • 1 Tbsp. Fresh Ground Coffee
  • 2 Tbsp. Coconut Oil
  • 1 tsp vanilla
  • 1/2 tsp cinnamon
  • 1/2 tsp baking powder
  • 1/4 tsp salt


  • Throw all of the amazingness you see above into a nutribullet or food processor and blend until smooth.
  • Make the pancakes any size your pancake lovin heart desires! Cook about 2 minutes each side, when you see the bubbles pop, it's time to flip!


Use your favorite toppings to make these pure magic! I topped mine with coconut and coconut nectar.

They are a little thin but when you stack them and dig in you'll never notice.

These also make for great emergency sweet tooth snacks! I like to make a batch of silver dollar sized pancakes at the beginning of the week and slather a little almond butter on them when I need a fix, and they pack super well too! There is nothing better than eating pancakes at 35,000ft.
